Last blood work results from April are back!
A1C is 5.7
Thought it was going to be much worse...Couldn't seem to get my fasting blood sugar down low enough to please me, but my A1C was still improved. Last December my A1C was 6.5.
My Triglycerides came down from 210 to 195, that was a disappointment too, but at least they went down and not up.
Still struggling with weight loss. Its at a virtual stand still.
Still doing intermittent fasting, but not regimented.
My HDL did go up a few points but I'm still being scolded by my doctor about my total Cholesterol.
If I could get my triglycerides down it would be a non-issue.

Am I making progress with HFLC?
Lately I've been pretty frustrated because the slightest of cold or virus and my BS levels go up and my averages get all messed up. I've been sick for over a week but not with much as a far as a discernible symptom. I've has some headaches and a dry scratchy infrequent cough but nothing too bad. The biggest indication that I am fighting something is my fasting BS numbers. They've been between 140 and 170. I had just started celebrating fasting numbers in the low 1-teens (112, 114, 114) and then I got hit with this little annoying virus.
I think I'm finally on the downside of it after taking a day off and sleeping...a lot! I woke this morning feeling refreshed, head ache gone, energy level up, good mental clarity. My morning number wasn't great though... still low 140s. But, I am an avid blood tester and recorder. I have a handy dandy app that I use to record my blood sugars and it calculates my monthly averages.
I started recording with this app in June and I have averages for each month going back to that time.
So before I got sick this month, my average for January was 108 and I was really proud of that. But even with the illness, you can see there is progress...
Averages:
June: 149
July: 145
August: 141
September:127 (I went from low carb to HFLC Ketogenic about mid August)
October: 124
November: 122
December: 118
January: 114
So even with an illness in December (stomach bug) and another in January (cold) I am improving.
Of course it doesn't really fulfill my need for instant gratification, but at an average of 4 points per month, I could be down to normal numbers by August...maybe sooner if my February turns out the way my January began.
I'm stuck at 35 lbs. lost and plan to start exercising again. It took me over a year to lose that even though I used to be able to lose 10lbs per month when I put my mind to it. What can I say, High carb, low fat living destroyed my thyroid.
My N=1 might be slow going, but it's going.
I watch my new friends in the Reversing Diabetes group on Facebook and they continue to inspire me.
When I feel like giving up, their determination is contagious and keeps me going.

Pizza is making our kids fat...And other awesome uses for Grant Money
University of Illinois spent grant money to discover that pizza is fattening!
Well thank you Captain Obvious! What the hell would I have done without you? My kids might have grown up obese! Oh WAIT! My kids are grown and they are not, nor were they ever OBESE...I wonder why?
Why?
How about parental limitations?
Raise your kids don't let them raise you!
What a bunch of Geniuses! I think someone should give me $100K in grant money so that I can tell them Sugar is fattening and causes all kinds of diseases!
Or that letting kids eat snacks all day long is making them fat and tired.
I'll give this one out for free...no Grant money required, published by the University of Vituperation!
Here's whats making our youth obese. They are eating too much sugar, too many carbohydrates and processed foods, and they are eating too often.
They are seriously talking about fortifying pizza to make it more nutritious. Here's how I fortify pizza, I serve pot roast with broccoli and a big Greek salad and call it pizza.
What? Your kids wont eat broccoli? Maybe if you stopped steaming it, boil the crap out of it and melt some garlic butter on it, they would devour it! Did you know that broccoli is more nutritious cooked than it is raw? Yeah that's right!
I feel like I'm reading "The Emperor's New Clothes" only instead of a naked king its processed low fat garbage. Our kids are fat for the same reasons WE ARE FAT. See previous post What Really Makes Us FAT??
Instead of the child who cries out "He's not wearing any clothes" it's me crying out "Your kid is fat because you feed him three meals and three snacks and use 90% lean beef in your shitty processed Hamburger Helper!!"
Lets see, what are the ingredients in that?
Hamburger Helper Ingredients:
Enriched wheat flour...why do they enrich it? because when they process it any nutrition that it might have had in it, which for wheat isn't much, is GONE.
Corn starch
oh oh oh....MORE FLOUR....good good
Sugar - OH GOOD because Americans don't have enough of THAT in their diet!!
Ricotta cheese - the first decent ingredient so far
Tomato
MSG - Fantastic!
Maltodextrin - who has that in their pantry? Anyone? Anyone?
Citric Acid - "Oh like in lemons and limes!" you say...but no! here is the truth about Citric Acid!
A variety of yeasts and molds make citric acid, but Aspergillus niger, a mold that belongs in the same family as penicillin, is used for large-scale production.
YUM! You enjoy that now ok?
Partially Hydrogenated Soybean Oil - Oh yay! Soybean oil is healthy right??? WRONG!
To convert soybean, cottonseed, or other liquid oil into a solid shortening, the oil is heated in the presence of hydrogen and a catalyst. That hydrogenation process converts some polyunsaturated fatty acids to monounsaturated and saturated fatty acids. It also converts some monounsaturated fatty acids to saturated fatty acids. Thus, a healthful oil is converted into a harmful one.
Modified Corn Starch - because the regular corn starch listed above is NOT enough! Nope not good enough for you!
Natural and Artificial Flavors
I'll skip a few here....
Enzyme Modified Blue Cheese - WTF?
Enzyme-modified cheese (EMC) is cheese curd which has been treated with enzymes to produce a concentrated cheese flavour ingredient.
Butter Oil & Nonfat milk - ok seriously, does it strike anyone else odd that they have taken the oil from butter and combined it with nonfat milk? Isn't that just cream? Who thinks this shit up? I mean is it some culinary chemist trying to justify his salary or what? I mean really somebody comment on this because I really want to know!
More Blue Cheese....There's more mold in this stuff than there was in my grandmothers refrigerator in 1976...and if you knew my grandmother, you'd know that's saying something!
Sodium Caseinate - thats the old cheese clotter...maybe to get butter oil and nonfat milk in the mood. ;)
Silicon Dioxide - Is your mouth watering yet???
Enriched Macaroni (wheat flour, niacin, ferrous sulfate, thiamin mononitrate, riboflavin, folic acid), Corn Starch, Salt, Enriched Flour (wheat flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid), Sugar, Ricotta Cheese* (whey, milkfat, lactic acid, salt), Tomato*, Monosodium Glutamate, Maltodextrin, Citric Acid, Partially Hydrogenated Soybean Oil, Modified Corn Starch, Natural and Artificial Flavor, Paprika, Spice, Color (yellow lakes 5 & 6, yellows 5 & 6), Mono and Diglycerides, Cheddar Cheese* (milk, cheese cultures, salt, enzymes), Yeast Extract, Enzyme Modified Blue Cheese (milk, cheese cultures, salt, enzymes), Cream, Whey, Enzyme Modified Cheddar Cheese (milk, cheese cultures, salt, enzymes), Butter Oil, Nonfat Milk, Blue Cheese* (milk, salt, cheese cultures, enzymes), Sodium Caseinate, Silicon Dioxide (anticaking agent), Sodium Phosphate, Sodium Citrate, Calcium Caseinate, Enzymes.*Dried
Stop eating shitty over processed foods. stop eating 5 times a day, eat some fat, COOK...yeah that thing in your kitchen that gets hot...thats a Stoooove...you put raw food on it and it cooks it!
Well, I guess I was extra Ranty today! I know all my readers agree with me. I love you all and thanks for reading!

"Where's the Beef?" and "The USDA is a Drug Cartel"
A message to the US Government
In contemplating the many topics that I could post on this irreverent rant about dietary and medical conventions being lies, half truths and misconceptions, I was thinking about the U.S. Department of Agriculture and about their lobbying for the American wheat and grain farmers. I mean supporting those consumables must boost our economy even if that shit IS killing many of us. Not only does the Government subsidize those farmers, they lobby the consumption of those products in the US Dietary Guidelines for all us Lemmings to follow blindly...Again, the Pied Piper of Hamlin comes to mind.
This is a great argument for LESS GOVERNMENT in our lives. High Carb Low Fat may work for some, but for most its deadly so you should just stay the hell out of our lives.
Don't get me wrong, I am deeply patriotic.
Uncle Sam is sleeping with Big Pharma
I don't begrudge the farmers their living, and there will always be demand but should the USDA really be pushing that stuff? Not only do they support farmers, they are keeping the pharmaceutical companies rolling in the dough (bad pun)! Sucking the social security checks right out from under the elderly. Preying on the poor, middle class and rich! All money is green to them and they have no prejudices for who's money to take.
If the pharmaceutical companies have a council, its tag line should be:
"Drug the symptoms and screw the cure"
The Government of the United States Department of Agriculture is really just the biggest drug cartel in the world.
Why would I compare the USDA to a Drug Cartel?
Well they don't warn against the hidden sugars in processed foods at all and that should not be minimized. According to Dr. Mark Hyman and others, sugar is 8 times more addictive than cocaine.
Read about that HERE
"Drink Water not sugary drinks" gets an honorable mention.
In 1970 less than 1% of all sweeteners were High Fructose Corn Syrup, in 2000 it constituted 61.2%. That was 15 years ago. What is it today?
Read a study on HFCS in beverages HERE
What they fail to mention is the widespread use of High Fructose Corn Syrup in processed foods.
Maybe the 2015 guidelines will be different.
Whats in your ketchup?
INGREDIENTS: Tomato Concentrate Made From Red Ripe Tomatoes, Distilled Vinegar, High Fructose Corn Syrup, Corn Syrup, Salt, Spice, Onion Powder, Natural Flavoring.
What's in your Pop-Tarts?
ENRICHED FLOUR (WHEAT FLOUR, NIACIN, REDUCED IRON, THIAMIN MONONITRATE [VITAMIN B1], RIBOFLAVIN [VITAMIN B2]),CORN SYRUP, HIGH FRUCTOSE CORN SYRUP, DEXTROSE, SOYBEAN AND PALM OIL (WITH TBHQ FOR FRESHNESS), CRACKER MEAL, CONTAINS TWO PERCENT OR LESS OF WHEAT STARCH, SALT, DRIED STRAWBERRIES, DRIED PEARS, DRIED APPLES
More Guideline Mistakes:
"Make at least half of your grains, whole grains"
Because it matters?
How about this?
Wheat is an Opiate
Or This:
Whats the glycemic index of "whole wheat bread" ?
It's 71 according to Harvard and another source- Thats higher than the glycemic index for Vanilla box cake with vanilla frosting, Coca Cola, Peanut M&Ms, a Snickers bar, and table sugar. You may as well have ham and cheese on sugar cookies.
If you aren't familiar with the "Glycemic Index" it is defined by Wikipedia as:
The glycemic index or glycaemic index (GI) is a number associated with a particular type of food that indicates the food's effect on a person's blood glucose (also called blood sugar) level. The number typically ranges between 50 and 100, where 100 represents the standard, an equivalent amount of pure glucose.[1]
What the USDA Dietary guidelines say about fat:
Fat is the primary fuel for light to moderate intensity exercise. Although fat is a valuable metabolic fuel for muscles during endurance exercise and performs many important functions in the body, no attempt should be made to consume more fat.
So I went looking for adversaries! Adversaries that I could team up with in a "fangirl" kind of way.
I thought ..."The Beef Council guys..." so I gave it a Google.
Beef.org is what I found first and I was delighted to find dozens of beef related links there that I just knew would be touting the benefits of a Low Carbohydrate High Fat diet, the benefits of bone broth and the nutrient denseness of organ meats.
The first link I followed was Beef Nutrition dot org and to my shock and amazement, there was only some blurbs about including "Lean Beef" as part of a healthy diet. Whaaaat?
Beef Research dot org was my next stop. Now I admit, I only skimmed the article titles but most of them made reference to lean beef and nothing seemed to talk about the merits of a diet high in saturated fats.
I thought "OK OK keep looking, they can't be completely ignorant, I mean this is their thing! Beef is their life, their bread and butter" (another bad pun). I went to Facts about beef dot com and started looking through their nutrition articles. Again, references to LEAN BEEF. Don't they know that Low carbohydrate High fat diets are curing everything from Diabetes to Cancer? C'mon cowboys, jump on the bandwagon here!
This is a growing community that will eventually be the majority (HOPEFULLY). We want you to be our patrons!
The Best thing I could find was on Factsaboutbeef.com where they interviewed Nina Teicholz author of The Big Fat Surprise
Well, at least it something.
Come on Beef guys. I don't have to ask you guys "Where's the Beef?" but I do feel as though I have to ask "Where's the FAT?"

"Difficult to Sustain is nonsense" And "Pork is magical"
When I first heard that the American Diabetes Association was recommending 210grams of carbohydrate a day and not lower, because lower is better, because they felt that a lower carbohydrate diet would be too difficult to sustain, I was overcome with the feeling of indignant rage.
What am I, 5? Am I so incapable of thinking and doing for myself that they wouldn't even make that an option? A choice? Don't presume to know me ADA because you don't! Jackasses!
Since then I have read many an article or comment stating the same, usually from similar jackass sources. Perhaps there is some truth in the statement for those too picky or lacking creativity. I think its absurd nonsense. Must you have grain, sugar, fruit, beans and potatoes? I assure you, you do not. What would you rather have...Hamburger helper, or fried pork chops and portabello mushrooms sauted in butter with a cream sauce? (BTW the latter dish takes less time to cook) Hot dogs and French fries or Kielbasa pan fried in butter with onion and Saur Kraut.
Maybe because I have a broad pallet or maybe because I've been doing this a while now, but high fat low carb isn't that difficult, in fact I have discovered wondrous variety and deliciousness beyond imagination! And I'd rather not trade a toe for a lady finger. Eating one's way to the grave is just a sad sad legacy. If you dont think your life is worth working a little for, then you probably have more serious issues than Diabetes or Obesity!
Keep in mind that fat is much more satiating than carbohydrates. You'll eat much less often... No that is NOT bad for your metabolism! Remember too that sugar is 5 times more addictive than heroin and wheat is as addictive as Crack Cocaine! Get rid of that stuff and regain control of your appetites and say goodbye to cravings.
Here are some other amazing things that I eat. I don't miss grains, processed foods, sugar, or starchy vegetables at all!
Some of these are meals, others ingredients. So many possibilities!
Kielbasa
Bacon
Butter
Sour cream
Cream cheese
Cheese (how many full fat cheeses exist, I can't list them all)
Ribs
Eggs, how many things can you make with eggs
Pork rinds, make a good breading and a substitute for bread crumbs in meatballs and meat loaf
Deviled eggs
Blue cheese cole slaw
Regular cole slaw (I like to make my own mayo with NON processed/seed/vegetable oils. Olive oil is preferable.
Pulled pork
Roast beef
Beef brisket
Pork chops
Pork loin
Any meat Stroganoff
Omelettes (add any meat, any cheeses, spinach, onion, mushrooms, broccoli, etc.)
I had a bacon and feta omelette last summer that was to die for.
Sausage (all kinds)
I made a sausage stuffing for thanksgiving with lots of celery and onion. Amazing!
Sausage with peppers and onions
Eggs benedict, hold the english muffin
Hollandaise on anything
Bacon cheese burgers, no bun, no ketchup
Pepperoni and cheese
Salami and cheese
Tuna salad in an avacado
Fajitas, no tortilla
Ham (watch how its cured)
Lamb (leg, shank, roast, ribs etc)
Salmon with homemade dill sauce, lemon butter sauce or whatever tastey fat you want to serve it with
Sardines in olive oil
Prociutto
Chicken wings
Chicken thighs
Cream based chicken soup
Almond butter
Cashew butter
Coconut butter
Macadamia nuts
Brazil nuts
Almonds
Coconut
Whipped cream
Heavy whipping cream
Avocado
Guacamole
Spinach
A lot more things that I am forgetting!
If you have a favorite carbohydrate laden dish, visit our good friend Google. I guarantee there is a low carb or ketogenic version of it out there and you'll find the recipe.
I've seen breads, chips, crackers, and desserts of all kinds. Low carb and fabulous.
I've seen pizzas, ice cream and cookies. I eat out as much now as I did before. "No I won't have the pasta, but I will have a porterhouse steak!! Rare."
Its a little more work, but if the alternative is losing my eyesight, leg, heart failure, early death, or cancer, I'm motivated to work! Did you know that diabetics have a 42% increase in risk of getting cancer? Did you know that cancer NEEDS glucose to proliferate?
In closing I just want to ask...and who would argue against "Pork is magical" ?
What am I, 5? Am I so incapable of thinking and doing for myself that they wouldn't even make that an option? A choice? Don't presume to know me ADA because you don't! Jackasses!

What REALLY makes us FAT??
Katie Hopkins gains 50 lbs. just to prove to fat people she can lose it. What a piece of work! This lady gained 50 lbs. so that she can call fat people lazy.
She has no clue about diverse physiology, genetics and insulin resistance.
People who are overweight regardless of their glucose numbers, suffer from some degree of insulin resistance and I'll wager, genetic sensitivity to Carbohydrates which is really a thing.
Does this woman have any idea of the roles that Grelin, Leptin, and Insulin play in human biochemistry? No way, she's just an ignorant woman seeking her 15 minutes of fame!
In the 40s and 50s and earlier, it was well known that it was the Carbohydrates that led to obesity but the Heart Health Hypothesis has led us all to the low fat "fat makes you fat" LIE being peddled first by Ancel Keys then later by our own Government (US Department of Agriculture - Dietary Guidelines -Goals for diet and health published in 1977) to lead us all like the Pied Piper's rats to our untimely deaths.
Shortly after those guidelines were published, there was a significant upturn in the rate of obesity after over 50 years of remaining at about the same rate.
Are fat people lazy and stupid or just victims of a perpetuating LIE that comes from doctors who get less than a week of nutrition classes in Medical School, the US Department of Agriculture, and all the BIG FOOD that jumped onto the "healthy" (and CHEAP) whole grain band wagon?
To address growing obesity, Doctors, Scientists, and Nutritionist have conducted studies. The Women's Health Initiative Dietary Modification Trial involving thousands of women showed that calorie reduction, with increased exercise, and decreased dietary fat produced almost NO weight loss over a 9 YEAR period! The lie doesn't work! What's the lie? "EAT LESS AND EXERCISE MORE".
IT'S A LIE!!!
Q: What causes obesity?
A: Insulin Resistance
Q: What Causes Insulin Resistance?
A: Persistent exposure to high levels of insulin
According to Dr. Fung, A vicious cycle develops which is similar to "Tolerances" that we develop against drugs and antibiotics
The more insulin secreted to deal with the glucose produced by high carb diets, the more resistant (or tolerant) we become to it and therefore the more insulin that has to be produced to deal with the glucose.
Q: How do we get "Persistent exposure to high levels of insulin"?
A: A diet high in refined carbohydrates and sugars a.k.a "S.A.D." or "The Standard American Diet"
If you don't want to be fat anymore lower your insulin levels by drastically reducing your sugars and processed carbohydrates. Increase your fat intake to help with satiety (and a bunch other things).
I am not a Doctor, Nutritionist or Biochemist.
I'm not responsible for you or your health.
I am not going to tell you to consult your Doctor before changing your diet because most Doctors know NOTHING about nutrition. I encourage you to DO YOUR OWN RESEARCH on this topic, come to your own conclusion and take your life and health into your own hands!!
I have been researching this for myself like its my JOB for 9 months.
I have taken my health into my own hands based on my own research.

The dangers of being sick - More dangerous is the advice of the ADA while sick
Sick in a cold and flu kind of way, not sick in a "I have a disease" way. But the dangers of having a cold while suffering from the great lifestyle disease of our age is especially bad as it raises the blood sugars. Worse is the advise the ADA gives us to combat it.
The advice the ADA gives is not only bad, its CRAZY, ILLOGICAL, and one might question their collective IQs if one has half a brain cell of their own.
When you are a diabetic and you get sick, your body is distracted by fighting off your virus and becomes inefficient about handling your other hormones and systems like insulin and liver glucose dumping. So you may see your blood sugars go up in excess of 50 points! YIKES!
I was just starting to see my fasting blood sugars down in the 112-114 range when I got hit with a mild cold. Mild though it is it hiked my morning fasting blood sugars up to the 140-145 range. Even though I know the reasoning behind it, it's so very frustrating to be fasting every other day, eating an extremely low carb high fat diet and still seeing these numbers so high. I just try to think back to last summer when it was common to see numbers in the 160s, 170s, 180s, and even 190s. I try not to lose sight of the progress I have made.
Still there is a feeling of betrayal by one's own body. I can't help feeling that bitter betrayal despite trying to do everything I know to be right to heal and get my insulin and glucose toxicities under control...non toxic...normal!
So on to the ADA who would have us all drugged up by their favorite sponsors, BIG PHARMA!
They recommend that if you are diabetic and sick to eat 15 grams of carbohydrate every hour.
WTF??? How the *@!% does that make ANY sense?? My body is experiencing high blood sugars due to being sick. If I could test my insulin level, I would probably see that elevated as well in an attempt to regulate that elevated glucose. My insulin resistance creates a situation that causes the insulin to remain in the bloodstream causing a potentially toxic affect and worsening my insulin resistance. So the ADA in their infinite stupidity says I should "Eat (or drink) 15grams of carbohydrate every hour". And this to a person who does not usually eat 15 grams of carbohydrate in a day. If I didn't respect my body so much, I would do it and record the results in some kind of perverse experiment to prove the ludicrousy of this advise!
Why would the ADA recommend eating 15 grams of carbohydrate for people who will undoubtedly be experiencing higher than normal blood sugars? I'm sure they have some jack-legged explanation but I'm sure too that there are more holes in it than Swiss cheese! The saddest thing is the countless lemmings blindly following that rubbish advise to their own untimely deaths!
Wake up and stop drinking those 15grams of carb kool-aid!
